Fish Taco Stuffed Peppers

  • Mahi Mahi (your serving size)
  • 16 oz Bell Peppers
  • 3/4 cup Water
  • 1 tbsp Taco Seasoning
  1. Preheat oven to 450°F.

  2. Pour 1/2 cup water into baking dish.

  3. Slice 2 peppers in half and remove the stems, place on a baking sheet and set aside.

  4. Chop remaining pepper into small pieces.

  5. Heat 1/4 cup water in a skillet over med-high heat, add chopped peppers, cook until done then remove from heat.

  6. Add fish to skillet and cook until done.

  7. Add peppers back in and stir in taco seasoning.

  8. Stir until combined and flake fish into small pieces.

  9. Scoop mixture into pepper halves and bake for 35 minutes.
