Citrus Chicken Salad

  • Cooked Chicken (your serving size)
  • 1/2 Grapefruit
  • 8 oz Romaine Lettuce
  • 1/3 cup Pacific Organic Bone Broth (can substitute water)
  • Pink Salt (to taste)
  • Black Pepper (to taste)
  1. Cut the chicken into bite-sized pieces.

  2. Heat the bone broth (or water) in a skillet over med-high heat.

  3. Add chicken and cook through.

  4. Remove the rind from the grapefruit and chop into 1” pieces.

  5. Add the grapefruit to the skillet, cover, and reduce heat to low and simmer for 3 min. Stir occasionally.

  6. Toss romaine with dressing and top with chicken mixture.

  7. Sprinkle pink salt and pepper to taste.
