Italian Cod with "Rice"

  • Cod (your serving size)
  • 1/2 cup Tomato Sauce (no sugar added)
  • 1/2 cup Diced Tomatoes
  • 8 oz Riced Cauliflower
  • 8 drops Stevia
  • 1 clove Minced Garlic
  • 1 tbsp Parsley
  • 1/2 tsp Paprika
  • 1/4 tsp Onion Powder
  • 1/4 tsp Garlic Powder
  • 1/8 tsp Cinnamon
  • Lemon Juice (to taste)
  • Pink Salt (to taste)
  • Black Pepper (to taste)
  1. Preheat oven to 350°F and line baking sheet with parchment paper.

  2. Place cod on a baking sheet and coat with lemon juice.

  3. Bake for 12-15 minutes.

  4. In a saucepan, over med-high heat, combine tomato sauce, diced tomatoes, garlic, and spices.

  5. Cook, stirring frequently, until heated.

  6. Plate riced cauliflower, cod, and top with sauce.
