Italian Cod with "Rice"
- Cod (your serving size)
- 1/2 cup Tomato Sauce (no sugar added)
- 1/2 cup Diced Tomatoes
- 8 oz Riced Cauliflower
- 8 drops Stevia
- 1 clove Minced Garlic
- 1 tbsp Parsley
- 1/2 tsp Paprika
- 1/4 tsp Onion Powder
- 1/4 tsp Garlic Powder
- 1/8 tsp Cinnamon
- Lemon Juice (to taste)
- Pink Salt (to taste)
- Black Pepper (to taste)

Preheat oven to 350°F and line baking sheet with parchment paper.

Place cod on a baking sheet and coat with lemon juice.

Bake for 12-15 minutes.

In a saucepan, over med-high heat, combine tomato sauce, diced tomatoes, garlic, and spices.

Cook, stirring frequently, until heated.

Plate riced cauliflower, cod, and top with sauce.
